Is there a difference in meaning between NAN NO HON and DONO HON?
In my head, I feel that なんのほんをよみましたか NAN NO HON WO YOMIMASHITAKA means "what book, out of all the books in existence, did you read?" ie, what was the book called, or what type of book was it?
While どのほんをよみましたか DONO HON WO YOMIMASHITAKA means "Which book, out of the ones here, did you read?"
Or are the two interchangeable?

1) なんの ほんを よみましたか。(NAN NO HON O YOMIMASHITAKA)
= What book, out of all the books in existence, did you read?
2) どのほんを よみましたか。(DONO HON O YOMIMASHITAKA)
= Which book, out of the ones here, did you read?
Your English translation is perfect :)
なんの (NANNO) and どの (DONO) are not always interchangeable. They are used differently depending on the context/situation.
1) Hiroshi went to the library alone yesterday.
ひろし: きのう、としょかんで ほんを よみました。(KINOU, TOSHOKAN DE HON O YOMIMASHITA)
= I read a book at the library yesterday.
ともだち: なんのほんをよみましたか。( NAN NO HON O YOMIMASHITAKA)
= What book did you read?
2) Hiroshi and his friend went to the library together and borrowed some books. Hiroshi read one of them at home yesterday.
ひろし: きのう、ほんをいっさつ、よみました。(KINOU, HON O ISSATSU, YOMIMASHITA)
= I read one of the books yesterday.
ともだち: どのほんをよみましたか。(DONO HON O YOMIMASHITAKA)
= Which book (out of the ones you borrowed) did you read?
His friend said どのほん (which book) because he knows what books Hiroshi has borrowed.
